255 is the max width recommended for 8.5J rim by all experts in tyre / wheel / vehicle mfg. They know what they're talking about and thus the advice should be respected. Especially when tyres are the only point of contact with the road.
If your aim is to have the wheels sit flush with the body work - spacers are what you'll need.
If you want to eliminate the gap between tyre and wheel arch then you'll need to lower the car.
