You are likely used to other cars, where the temp gauge is water, not oil. Water comes up to temp quickly. Oil takes forever. Take it as a good sign that your oil comes up to temp slowly. It indicates good cooling!
Just wait for the startup / fast idle to kick down and drive off. Drive easily until the engine at least gets the oil temp off the peg. Drive progressively harder as it warms. Don't beat on it when it's still on the peg.
Easy peasy.
