There is no single answer for this, but for esys coding the gold standard is diag mode with a voltage regulator connected.

Never code DME ECU with the engine running.
SAS etc won't appear except in diagnostic mode/engine running
VIP2 cannot be coded on later I-step except in diag mode

So the best approach is diag mode but then there is increased risk of battery drain and shutoff hence using the voltage regulator/battery charger to be minimise risk.
