I'm willing to bet those are Canada and European seats only. The pre-LCI versions in those countries had the Merino leather with that stitching. I wish America would get that too, that was probably the biggest reason I didn't pull the trigger on that car, other than cooled seats too, just went full M3.
Vernasca just felt plastic-y to me. I know others felt the same too. The merino takes that interior to another level.
