So, is there a different shortcut to full manual mode in any drive mode? I thought there were some tricks you can do with the paddles?

Irrespective of the drive mode, shifter in M/S and using the paddles is the only way for almost full manual (almost because car won’t upshift till you do but it will downshift by itself if the revs are real low).
