It's not about how fast the downshifts happen. It's about *when* they happen. As you say, this all depends on whether BMW fine tunes the application to respond to driver inputs, or to change gear whenever it feels like (e.g. up-shifting when you lift off the gas, or mid-apex!)

Applying your arguments about 'who is the typical customer' for these cars, I can only imagine that this won't be set up for the few people who like the instantaneous shifts of a good DCT, but want to make their own gear choices. e.g. in those videos I don't hear a whole lot of aggressive downshifting under braking, I'm hearing occasional downshifts on the exit of the turn. (e.g. one around 0:35 seconds)
Maybe those portions of the 'Ring don't require aggressive downshifts. I'm not sure having never driven it. I remain hopeful for the DCT crowd.
The car is running really well in the video. I think we will not be dissatisfied or disappointed with the automatic transmission.

BTW, isn't the M8 automatic? And I saw a video of an M8 in a track and I loved what I saw!
