Tried taking a photo of the screen while in the garage without starting the car and found an easier way to adjust the gong/pdc volume.

In id7 (probably similar but different to id8), go to settings > general settings > sound > “volume settings”. Select either PDC or Gong to adjust the volume for either setting. While the Gong or PDC sound is active, use either the steering wheel volume control or dash volume control knob to adjust an additional gong/PDC volume setting. While the menu volume setting allows adjustment of gong and PDC volume separately, adjusting the volume knob or steering wheel volume control, while either sound is active, further adjusts the volume of both gong and pdc.

This also works for navigation sounds. You can adjust the maps/google maps/waze/etc. volume using the volume control knob/buttons while a navigation sound is playing.
