I've ordered my Skyscraper Grey M340i with Tacora Red SensaTec but I like how it looks with the Oyster as well. I think the red interior makes it more sporty to match the sportiness of the car.

If you want the M Sport seats they're only available in black and cognac. If not you can choose any colour: oyster lights up the interior nicely but is going to show marks pretty easily, you'd definitely want to coat the leather with a dye blocker / protectant product if you went for that.
