It really makes a snapping « cloynk » sound, like with a hammer on a bar. I also saw it happen when my wife drove backwards and you really could see the wheel making a sudden snappy movement when it occured.
It does not occur when backing in snow or gravel, so indeed it seems like on pavement something is building up and then snaps, while on gravel that accumulation is not possible.
When driving backwards very very slowly it happens less.

If I understand the above so far, it most likely is the steering rack?

Have you had it looked at ? And have you found what is causing this

I am getting my car checked on this Monday i will let them know that maybe its the tension struts . Did changing the tension struts fixed it for you ?
