Unable to Save Memory Buttons.

No matter which screen I try to save to a memory button I get the message: unable to save.

A few screens I’ve tried were climate control, tire pressure display, weather.

Try setting the memory button on the menu item you use to get to said screen.

So instead of holding eg. the '1' button once you're on the tire pressure diplay, hold the '1' button when you're still in the options menu with "Tire Pressure" item selected, but don't actually go into it.

You're setting the shortcut to mimic like you've selected that menu item, and not setting it to the screen itself. (but it will actually open the screen itself, just like if you'd accessed it through that menu item)
