-The dealer said that there was no way to disable automatic OTA updates at this time. I wasn't able to get a straight answer to the question, "So you're telling me I could have an OTA forced on me without me knowing and it may overwrite the flash again?".

I believe that you can disable the OTA updates. Go to general settings -> data privacy -> individual selections and turn on/off the ones you want. Included in the list is "Remote Software Updates"
